Fireside Apple Recipes

Savory Pork Chops

2 chops
3-4 apples
1 large onion
½ cup currants or raisons
¼ cup (or to taste) Honey
½ cup Apple cider
3 Tbs olive oil
3 Tbs sage
salt and pepper

Rub sage on meat, then seer in olive oil, season with salt and pepper, put in a dutch oven, add sliced
apples, onions and raisins. Pour cider over it, drizzle with honey, cover and bake at 350 degrees for
90 minutes.

Pumpkin Medley
1 pie pumpkin
2 apples
1 small onion
¼ cup raisins
pumpkin pie spice
Courtland, McIntosh and Zestar are great cooking apples.

Add brown sugar if you like. Layer the apples, onions and pumpkin slices

Apple squash medley
2 apples
1 acorn squash peeled and sliced into ½ inch thick pieces
¼ cup brown sugar
Ginger Squash soup
One medium butternut squash
4 cups apple cider
3 apples
2 leeks (optional)
2 Tbs fresh ginger chopped finely
Parsley or Pine nuts for garnish

Halve and de-seed squash.  Bake squash 1 hour or until soft.  Core and peel apples, cook them down with a little of the cider.  Chop leeks into 1/8th inch rings and lightly sauté in butter or olive oil.  Scoop out squash and add to remaining apple Cider.   Puree in blender.  Combine all ingredients in a saucepan and simmer for 20 minutes.  Garnish with fresh parsley or toasted pine nuts.
