Baked Pumpkin Soup

A true fall treat; perfect for both Halloween and Thanksgiving.

– 1 pie pumpkin (10″ diameter); clean and remove seeds from the inside
– 2 C chicken broth
– 1/2 C chopped onion
– 1 C sliced carrots
– 1 C sliced parsnips
– 1 C cubed potatoes
– 1 T cinnamon basil
– 1/2 t fresh thyme
– 2 T parsley
– 1/4 t all spice

Add ingredients to the cleaned out pumpkin, stir well. Cover with the top of the pumpkin. Place on a cookie sheet and bake at 325 degrees for 3-4 hours.
